Joey Shashy

Since 1977, Joey Shashy has been combining creative ideas with savvy business skills to create financial formulas for success in the restaurant industry. His career began in Houston, Texas, with the Pappas Family, at their first restaurant.

His next venture took him from South Texas to the West Coast, where he developed and launched the original Chevy’s Fresh Mex Restaurant in California, with the Simmons family. In 1986, Joey founded the Uncle Julio’s Restaurant Corporation in Dallas, Texas, serving as CEO and President. Under his leadership, the company grew into a 12 unit, multi-million dollar, highly rated nation chain with restaurants in such highly competitive markets as Chicago, Dallas, Washington DC and Atlanta.

In 2007, Joey and a group of talented and dedicated industry leaders founded Mi Chula’s Good Mexican with a vision for revolutionizing the restaurant industry by creating a Mexican food dining experience like no other.

Joey holds a BS in Horticulture from Texas A&M University and has completed graduate work towards an MBA at the University of Houston.
